Meat-Free Favorites – Summertime Pasta

By Elena Johnson As the weather heats up in the summer, I start preparing more fresh salads and light, vibrant dishes. This Summertime Pasta combines delicate angel hair with a lemony sauce loaded with fresh herbs and snow peas – though you could use any green vegetable that cooks quickly such as asparagus, broccoli, or zucchini. Pair this recipe with a side salad or grilled asparagus for a quick and easy meal. Summertime Pasta Summertime Pasta 6 – 8 servings 1 medium onion, finely chopped 5 garlic cloves, minced 3 tablespoons olive oil ¾ pound snow peas, halved and ends removed 1 pound angel hair pasta Juice of 1 lemon Zest of half a lemon ¼ cup fresh chives, chopped ¼ cup fresh basil, chopped 1 teaspoon salt 1 teaspoon black pepper Sauté onion and garlic in olive oil over medium-low heat until onion becomes translucent. Add snow peas and cook approximately 3 minutes, until crisp-tender. Meanwhile, cook pasta in salted water according to package directions. When snow peas are cooked, turn off heat and stir in lemon juice, zest, chives, basil, salt, and pepper. Add pasta and toss well to coat. PHL May inflation rises 4.5% on higher prices of food, fuel, softdrinks, electricity

(MNS photo) MANILA (Mabuhay) – Headline inflation in the Philippines rose to 4.5 percent in May, from 4.1 percent in April and 2.6 percent a year earlier, driven by higher prices of food and non-alcoholic beverages, the National Statistics Office reported Thursday. “Faster annual increments were also registered in the indices of clothing and footwear; housing, water, electricity, gas and other fuels; furnishing, household equipment and routine maintenance of the house; transport; and communication,” the report read.  “Excluding selected food and energy items, core inflation escalated 3.1 percent in May 2014, faster than the 2.9 percent growth in April 2014 and 3.0 percent in the same month last year,” NSO added. Hope After Haiyan funds A dinner gathering to raise funds for the victims of typhoon Haiyan (Yolanda) was a big success as a big group of most influential Filipino-Americans came to extend their generosity that was held last Saturday (June 1) at the former Hollywood legendary Mary Pickford Estate to rebuild a school in Tacloban, Leyte. Our kababayans Edwin and Lani Raquel, who own the beautiful  mansion, were generous enough to offer their home as the venue to raise funds for the Missionary of Benedictine Sisters of Tacloban, who have been helping the survivors of the typhoon that wrought havoc in Tacloban and surrounding cities and municipalities. Hope After Haiyan committee and FilAm Arts chairperson Rocio Nuyda expressed his gratitude and appreciation to all the guests, including the Benedicitine Alumni (Agnesians, Scholasticans, Bedans), generous donors and entertainers – whose musical virtuosity was apparent throughout their performances, the media, vendors and many volunteers. Hotel tweaks meetings in quest for Mice

THREE-star Quest Hotel announced it has improved its meeting packages to increase its share of the Meetings, Incentives, Conventions and Exhibition (Mice) business in Cebu. “We are redefining our Mice package as we further strengthen our name as a conference center,” said Emet Sendin, area manager of catering services at Quest Hotel, in a press conference last Friday. He said the improved setting and new concepts are meant to bring out the best in each meeting. “If we will just retain the regular set-up, we might only get regular results. Meetings are where concepts and ideas are formed and are supposed to be nurtured,” he noted. The hotel came up with its own Mice package which stands for memorable settings, intriguing concepts, compelling rewards, and exciting experiences. The new Mice program at Quest features three themes for meetings, namely, Zen, Zest and Zugbu. The Zen package highlights a wholesome and healthy themed meeting, while Zest is an energy-packed themed break. Zugbu, on the other hand, highlights Cebuano comfort food. “We came up with themed meetings to provide choices for our corporate clients and as a strategy to attract more clients to hold meetings or conferences here,” said Sendin. Department of Foreign Affairs (DFA) spokesman Charles Jose said this in response to Chinese Ministry of Foreign Affairs spokesman Hong Lei’s statement that China’s reclamation activities in the Spratly Group of Islands “has nothing to do with the Philippines.” “Anything that impinges upon our sovereignty over territories that we claim is our business. Anything that affects our ability to exercise our sovereign rights and jurisdiction over maritime territories that we claim is our business,” Jose said in a press conference Monday. “Anything that upsets the peace and stability in the region is our business. Anything that raises tensions in the region is our business,” he said. President Benigno Aquino III previously said that new Chinese ships were seen around several reefs in the West Philippine Sea, specifically Cuarteron Reef and Gavin Reef, raising concerns that China will conduct further reclamation activities. The DFA had released a series of aerial photographs of Mabini Reef showing its progression from a submerged maritime feature into an artificial island that is likely being prepared for the construction of concrete structures. Amid the flaring tensions between China and its Asian neighbors over the territorial dispute in the West Philippine Sea, Presidential spokesperson Secretary Edwin Lacierda said at a press briefing that the Philippines’ relationship with China “is not solely dependent” on the territorial row. China claims almost the entire West Philippine Sea, including those within the Philippines’ exclusive economic zone. It has asserted its claim with reclamation activities and harassments in areas claimed by the Philippines. The Palace, however, remained confident with the other facets of the Philippines’ ties with China. On Instagram, delas Alas shared a photo of herself on the set of the film “Ronda,” which is a finalist in the New Breed category of Cinemalaya 2014. The actress said she is excited to be part of an indie film. “First time ko makaka-experience ng indie film… Yahoo, art-art naman to,” she wrote. Delas Alas shared that she will play the role of a policewoman in “Ronda.” “Pwede pala kong pulis…Hehe,” she wrote. Directed by Nick Olanka, “Ronda” is written by Adolfo Alix Jr and Jerome Zamora.
